Fanestil's Party Time Turkey Sour Cream Enchiladas

This is a recipe you have to prepare ahead, but believe us, it's well worth the effort.

Depending on your mood, and the ocassion, you can serve these with a simple green salad or go all out with the refried beans, spanish rice, and pico de gallo*. This recipe yields 14-15 generous servings but you can cut the major ingredients in half to make a smaller batch to serve those more intimate gatherings.

PREPARATION:

Place the butter or olive oil in a large skillet over medium heat and sauté onion and garlic until tender, about 5 minutes.

In a large bowl, using a spoon or whisk, thin sour cream with milk. Add sauteéd onion and garlic and stir well. Set mixture aside.

Combine the bell and jalapeño peppers together in a bowl and mix together fairly evenly. Roll cheese and cubed Party Time Turkey into tortillas (they should be about 1 1/2" in diameter) and place in the bottom of a deep 9" x 12" casserole. Sprinkle half of the pepper mixture evenly over the rolled tortillas in the pan and cover with half of the sour cream mixture.

Repeat the process with the remaining ingredients placing them on top of the existing layer in the casserole.

Cover the casserole and place it in the refrigerator for 24 - 36 hours.

Cover the casserole with an oven safe lid or foil and place in a 350°F oven. Bake for 1 hour.

Serve with side dishes of your choice.



*Pico de Gallo

Pico de Gallo is a simple salsa with lots of flavor. It is so easy to prepare it might just become a staple at your table. Best if used within a couple of days.

Combine all ingredients in a bowl and stir well. Cover and refrigerate for at least 4 hours to allow flavors to blend.
